Gluten-Free Egg Quesadilla (or GF Egg Sandwich)

This recipe is an adaptation of one of my favorite breakfast sandwiches (which, growing up, I ate on two pieces of toast). I find that it contains everything I love, rich flavor, “Mexican” bits n pieces and of course, cheese. I find this to be a filling meal and tend to eat it either for breakfast or as a quick lunch. The whole thing takes about 5 minutes to prep and cook and best of all, my kids love this. If eating this for breakfast, I find this is fine all by itself. For lunch I like to have a salad, as well.

You need:
A small, non-stick skillet or frying pan
1 slice of cheese
1 large egg
1 serving corn tortillas (2 torts)
1 tsp of mayonnaise

Makes one serving and is worth 5pts (I use deli-sliced extra thin American Cheese). It’s gluten-free!

Instructions:
1. Divide tsp of mayo between the two tortillas, evenly coating ONE side with it and set aside. Fry up the egg, adding salt and pepper to taste as you wish (my husband likes crushed red pepper on his). I like mine very thick, almost hard while my dh prefers his pretty runny. Prepare as you like; just be aware that a runny egg is a messy egg so this “sandwich” maybe be better eaten with a fork.
2. Remove the egg from the pan and set aside. Immediately place slice of cheese on egg so it has a chance to get all melty and perfect.
3. Brown tortillas on one side each (obviously the side with the mayo*) and remove from heat.
4. Layer the sandwich with brown sides of the tortilla facing out.
5. Enjoy!

For variation or flair, I will add jalapeños or salsa. :)

*The reason I use mayo is because I discovered, quite by accident, that it browns the tortilla perfectly with just a little bit of shine and I can’t taste the mayo at all. I find it’s much harder to use too much butter or oil this way, as well. Feel free to use something else. There are spreads that are less “pointy” but I find that since mayo is so easy for me to spread super thinly, I tend to use less of it than I would the less “costly” options, making it the lower point option after all. I use less than a point of this on both torts combined.
